The story of Kalizo Puerto Rican Cuisine is one of passion that began in the year 2000 in Las Croabas, Fajardo. Originally founded by Chef Manolo Bonano, our restaurant was created with the mission of offering the finest flavors of the sea, evolving year after year to perfect both our service and our culinary offerings.
For more than two decades, we have demonstrated resilience—overcoming the challenges of Hurricane María and creatively adapting during the 2020 pandemic with the successful “Kalizo Kiosko.” Along this journey, we developed and perfected iconic recipes that have become our signature, including our famous and exclusive Kalizo Sauce.

In May 2022, under the strategic vision of Charles Rivera, Kalizo began a profound transformation aimed at elevating Puerto Rican gastronomy to a new level. Today, our kitchen has entered a stage of maturity and mastery under the leadership of Chef Alex, who brings over 10 years of culinary experience.
Having spent the last four years refining and perfecting our house flavors, Chef Alex now leads a high-end culinary offering that blends the finest seafood and premium cuts of meat with the authentic touch that defines us.
